I Made it Myself! (Lessons in Cooking #2)

Perhaps it is just run-of-the-mill insanity, but I cooked again this week! That’s two weeks in a row I’ve tried new recipes, people. I will accept your affection and gifts as recognition of my awesomeness (and humility).

This week I made Grilled Vegetables with Lemon & Goat Cheese. I can’t find the original recipe (the link connects to the recipe on someone’s blog), but I think it came from Cooking Light. No original recipe means no pretty professional photography…you just get my crappy cell phone photography! (You’re so lucky.)

On nom nom! This vegetarian recipe was delish! I only modified one thing, using yellow squash instead of not-in-season asparagus. I also realized I need some tool to zest lemons. Because lemons don’t zest themselves, no matter how nicely you ask.

My parents gave me a grill for Christmas because I don’t have room for a BBQ on my minuscule porch. Grilling the vegetables on it worked great, though the yellow squash was a little overdone and the red onion was a bit underdone.

Then there was the goat cheese. Oh, goat cheese. You are delicious my face off.

I ate it hot the night I made it, and then had it as a cold salad the next day.

  1. Congratulations Cori! This is really wonderful! It looks really delicious in the picture! I have never tried goat cheese. How is it?

  2. Onions take a lot longer to cook than squash. I would put the onion on a few minutes before the squash so they’re ready at the same time and correct doneness. Good work! It looks delish!

    • Will do! I think the onion needed to be on there long before anything else. I ended up not eating much of it, since it was still raw!

  3. There are great bi-functional tools that zest citrus on one side and then let you peel off a little of the rind for a twist to put in your cocktail.

  5. Look at you go! I love Cooking Light – they haven’t led me astray yet. You can use a cheese grater to zest lemons, although if you don’t have that then I’m not sure what other substitute you could use.
